  6. After 5-10 minutes (when onion is soft) add the coconut milk and put on low heat. Wait 10-15 minutes, then check the oven, if the veggies + tofu are well baked (soft/crispy on the outside) add them in the pan and cook together for 5 more minutes.
  7. Drain the rice and serve all together - bon appetite :).
  8. Add fresh cut coriander (as in the picture) as finishing touch !.
